Quinqué, a casa de comidas in Chamartín, Madrid
Market cooking, slow fires and the glow of an oil lamp on every table.
The house
Quinqué is a casa de comidas for today: the everyday dining house where Madrid has always gone for a proper meal. Market cooking that keeps the flavours people remember, with long-simmered stews, seasonal produce and recipes made with craft and patience.
An open kitchen facing the dining room, white tablecloths, warm wood and an oil lamp lit on every table. From lunch to the long Spanish sobremesa, with no rush.
Our story
In 2019, Carlos Griffo and Miguel Ángel García opened Quinqué on Calle Apolonio Morales, in Chamartín, with a simple idea: a modern casa de comidas where food is cooked slowly and eaten without hurry. The name comes from the oil lamps, quinqués, lit on the tables every day.
The MICHELIN Guide recognises the house with a Bib Gourmand. In 2024, its Ibérico ham croqueta, made with Galician milk infused for twelve hours with the ham bone, was named the best in Spain at Madrid Fusión.
Carlos Griffo & Miguel Ángel García
Carlos and Miguel Ángel have cooked side by side since day one, in full view of the dining room. Their own kind of cooking, shaped by the market and by what they love to eat: recognisable dishes, done properly, changing with every season.
A table by the light.
